The word Mezcal derives from Nahuatl word Mexcalmetl which loosely translates to agave plant. Mezcal is often smokey and earthy, in part because of the tradition of cooking the piñas in earth covered pits as opposed to clay or steel ovens as with Tequila.

Any agave based spirit including Tequila may be called Mezcal but Mezcal is not Tequila. Around 50-100 varieties of maguey (agave) may be used in the production of Mezcal, providing endless options to Mezcal lovers everywhere.  This historical and exciting Mexican spirit is produced all over Mexico by using many different varieties of agave native to the regions and grown wild. Although the production around the town of Tequila, in Jalisco was limited in the 16th & 17th centuries, it became the main industry of the area by the 18th century.
